Lizzie’s Crispy Chicken Bites Recipe

Chicken Lizzie Bites

These little morsels combine tender chicken, smoky bacon, sharp cheddar, tangy pickled jalapeño, sticky maple syrup, and a hit of barbecue sauce for balance. The result is a perfect mix of sweet, savory, smoky, and spicy in a single portable appetizer—ideal for backyard grilling, potlucks, game day, or any gathering where finger food shines.

Ingredients

  • 1 pound chicken breasts or tenders, cut into 1-inch cubes
  • 1/2 cup barbecue sauce
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper, divided
  • 12 slices bacon, cut in half crosswise (24 halves)
  • 24 slices pickled jalapeños (about 1/2 cup)
  • 1/2 block sharp cheddar cheese, cut into 1/4-inch-thick cubes
  • 24 toothpicks
  • 1/4 cup maple syrup

Step-by-step Instructions

Step One: Prep the Chicken

Place the cubed chicken in a large bowl. Add the barbecue sauce, 1/2 teaspoon kosher salt, and 1/4 teaspoon of the black pepper. Toss until the chicken pieces are evenly coated. Let them marinate briefly while you prepare the other components—15 to 30 minutes is sufficient if you have time, but you can assemble right away if needed.

Step Two: Assemble the Bites

Work one piece at a time: lay a half slice of bacon flat, place a barbecue-coated chicken cube on one end, top with a cube of cheddar, and add a slice of pickled jalapeño. Carefully roll the bacon around the chicken, cheese, and jalapeño and secure with a toothpick. Repeat until all pieces are wrapped. When all bites are assembled, brush one side with maple syrup and sprinkle with the remaining 1/4 teaspoon black pepper.

Step Three: Grill and Serve

Preheat the grill to medium heat (about 350°F). Oil the grill grates lightly to prevent sticking—use a folded paper towel dipped in oil and tongs to wipe the grates. Place the chicken bites on the outer edge of the grill, not directly over the flames, to avoid flare-ups and to allow the bacon fat to render without burning.

Grill the bites for 10 to 12 minutes total, turning every 3 to 4 minutes so the bacon crisps evenly and the chicken cooks through. Keep the grill lid closed except when turning. Remove the bites when the bacon is browned and crisp and the chicken reaches an internal safe temperature. Let them cool slightly, then transfer to a platter and serve warm.
