Ingredients

For the Russian-Style Sauce

  • 2 tbsp mayonnaise (homemade or your preferred brand)
  • 2 tsp unsweetened ketchup
  • 1 tsp dill relish or finely chopped dill pickles
  • 2 tbsp very finely diced yellow onion
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1 tsp hot sauce (optional, adjust to taste)

For the Quesadillas

  • 8 grain-free tortillas (almond flour tortillas recommended)
  • 1/2 lb thinly sliced corned beef (from the deli counter)
  • 8 slices Swiss cheese
  • 3/4 cup sauerkraut, well drained
  • Kosher salt, to taste
  • 2–4 tsp avocado oil, for frying
  • Pepperoncini, optional, for serving

Instructions

Make the Russian-Style Sauce

  1. In a small bowl, combine the mayonnaise, unsweetened ketchup, dill relish (or chopped pickles), diced onion, chili powder, garlic powder, and hot sauce. Stir until smooth and taste; adjust seasoning if needed. Set aside while you assemble the quesadillas.

Build the Quesadillas

  1. Lay out four tortillas flat. Spread a generous layer of the Russian-style sauce evenly over each tortilla.
  2. Distribute the thinly sliced corned beef evenly across the sauced tortillas.
  3. Place two slices of Swiss cheese on top of the corned beef on each tortilla.
  4. Top each with roughly 3 tablespoons of well-drained sauerkraut (about 3/4 cup total split between the four). Sprinkle a small pinch of kosher salt over the sauerkraut if desired.
  5. Cover each assembled tortilla with a second tortilla to form a quesadilla.

Cook the Quesadillas

  1. Heat a large non-stick skillet over medium heat. When hot, add about 2 teaspoons of avocado oil and swirl to coat the pan.
  2. Carefully place one or two quesadillas in the skillet (avoid overcrowding). Cook until the bottom is golden and crisp, about 3–4 minutes.
  3. Using a sturdy spatula, flip each quesadilla and cook the other side until golden brown and the cheese is fully melted, another 3–4 minutes. If the skillet looks dry, add an additional teaspoon of avocado oil to help them crisp.
