Whole30 Broccoli Salad with Bacon and Almonds

Whole30 Broccoli Salad

Summer is the perfect time for make-ahead salads that travel well to potlucks, backyard barbecues, and family gatherings. This Whole30 Broccoli Salad is a cleaner, flavorful take on the classic broccoli salad many of us grew up eating. I remember asking for my friend’s mom’s recipe in college and being shocked at how much sugar it called for. That’s why I developed a version that keeps the crunch and brightness but uses Whole30-compliant ingredients and less added sweetness.

This recipe delivers crisp broccoli florets, sharp red onion, tart dried cranberries, and crunchy sunflower kernels, all wrapped in a simple, tangy dressing made with compliant mayonnaise, garlic, and white wine vinegar. It’s a great side for grilled meats or a colorful addition to any summer table. Prepare it a few hours ahead to let the flavors meld — it holds up well in the refrigerator for several days, making it a solid choice for meal prep.

If you enjoy make-ahead salads, try pairing this broccoli salad alongside other crowd-pleasing options like Whole30 potato salad, a chicken pasta-style salad (using compliant substitutes), or a green goddess egg and avocado salad for a hearty, balanced spread.

Why this Whole30 Broccoli Salad Works

This broccoli salad balances texture and flavor: crisp, lightly bitter broccoli contrasts with the sweet chew of dried cranberries and the nutty crunch of sunflower kernels. The simple mayo-and-vinegar dressing adds creaminess and acidity without relying on added sugars or non-compliant ingredients. It’s a satisfying side that complements grilled proteins and fresh seasonal produce.

Make-Ahead Tips

For best results, assemble the salad a few hours before serving so the flavors can meld. If you prefer extra crunch, add the sunflower kernels just before serving. Store in an airtight container in the refrigerator for up to 5 days; the vegetables will remain crisp and the dressing will continue to flavor the salad.

Variations and Substitutions

This recipe is easy to adapt. Swap dried cranberries for raisins or chopped dates if you prefer a different natural sweetness. Toasted pumpkin seeds can replace sunflower kernels for a slightly different texture and flavor. For a dairy-free, Whole30-compliant twist, be sure to use mayonnaise made from compliant oils and no added sugar.

Serving Suggestions

Serve this broccoli salad alongside grilled chicken, salmon, or steak for a complete summer meal. It also pairs well with other make-ahead dishes for picnics or potlucks. For a heartier salad, toss in cooked, cooled quinoa or add chopped hard-boiled eggs (if your plan allows them).

Notes

Adjust the garlic and vinegar to suit your taste. If you prefer a milder onion flavor, soak the diced red onion in cold water for 10 minutes before draining and adding it to the salad. Taste the dressing before combining it with the broccoli so you can balance acidity and seasoning to your preference.
