That easy, bold dish inspired this Whole30-friendly take: Sheet Pan Chicken Piccata.

This sheet pan version is perfect for entertaining because it’s mostly hands-off: you prep, pop it in the oven, and enjoy your guests while the oven does the work. I prefer bone-in, skin-on pieces (thighs, drumsticks, wings). The skin crisps up beautifully while the meat stays moist. Nestled with lemon slices, vinegar and broth, the pan develops a bright, savory sauce—no need for a separate skillet or complicated finishing steps. It’s impressive enough for a special occasion, yet simple enough for a weeknight.
Ingredients
- 3½ pounds bone-in, skin-on chicken parts (an assortment of thighs, drumsticks, and legs)
- 3 tablespoons extra-virgin olive oil
- 2 teaspoons kosher salt
- ½ teaspoon freshly ground black pepper
- ½ teaspoon smoked paprika
- 2 small lemons, sliced into 1/4-inch rounds
- ¼ cup white wine vinegar

Step-by-step
Step one: Preheat the oven
Preheat the oven to 450°F (232°C).
Step two: Prep the chicken
Arrange the chicken pieces on a large sheet pan. Pat them dry with paper towels to encourage crisping. Drizzle the olive oil over the chicken and sprinkle evenly with kosher salt, black pepper, and smoked paprika. Rub the seasonings into the skin so each piece is well coated. Spread the pieces in a single layer and tuck the lemon slices between and under the chicken. Pour the white wine vinegar and chicken broth around the pieces so it can steam and flavor the pan sauce as the chicken roasts.
Step three: Roast
Roast the chicken in the preheated oven until the skin is golden and the meat is cooked through, about 30 minutes. Timing will vary slightly depending on the size of the pieces—bone-in thighs and legs usually take longer than wings.
Step four: Add aromatics and finish
When the chicken is nearly done, remove the pan from the oven and scatter the minced garlic, drained capers, and chopped parsley over the pieces. Return the pan to the oven and continue roasting until the garlic becomes fragrant and the chicken reaches a safe internal temperature, another 5 to 10 minutes. The lemon slices will caramelize slightly and the pan juices will mingle with the vinegar and broth to make a bright, tangy sauce.
Step five: Plate and serve
Transfer the chicken and lemons to a serving platter and spoon the pan juices over the top. Serve immediately while the skin is crisp and the sauce is warm.
