Garlic Butter Sauteed Mushrooms with Herbs

Sautéed Mushrooms

Sautéed mushrooms are a simple, flavorful side that complements a wide range of meals. They work especially well spooned over a bun-less burger to add richness and texture, or served alongside a filet mignon for an elegant, Whole30-friendly date-night dinner. With just a handful of ingredients and a hot skillet, you can transform ordinary mushrooms into a savory, caramelized accompaniment that enhances proteins, vegetables, and bowls alike.

Sautéed Mushrooms

This recipe stays true to clean-eating approaches like Paleo and Whole30 by using ghee in place of butter. If you prefer, regular butter can be used instead, or a neutral oil for a dairy-free option. I like the subtle saltiness that certain flavored ghees bring; they help mimic the familiar richness of butter without straying from a Whole30 plan. No matter which fat you choose, the method remains the same: high heat, minimal stirring, and a quick deglaze to concentrate flavor.

Total Time

Ingredients
  1. 1 tbsp olive oil
  2. 1 tbsp ghee (or butter or additional olive oil)
  3. 8 oz sliced baby bella (cremini) mushrooms
  4. 1 clove garlic, minced
  5. 1/4 cup chicken or vegetable broth
  6. 1 tbsp balsamic vinegar
  7. Kosher salt, to taste
  8. Black pepper, to taste
  9. 2 sprigs fresh thyme (optional)
Instructions
  1. Heat a large skillet over medium-high heat until hot.
  2. Add the olive oil and ghee; let the ghee melt and coat the pan.
  3. Add the sliced mushrooms and minced garlic. Spread the mushrooms into an even layer and let them sear for about 2 minutes without stirring to encourage browning.
  4. Stir and continue to sauté for 1–2 more minutes. Add the chicken or vegetable broth, season lightly with salt and pepper, and cook for another 3–4 minutes, or until the liquid has reduced by about half.
  5. Stir in the balsamic vinegar and add thyme if using. Sauté for an additional 1–2 minutes to let the flavors combine and the mushrooms glaze.
  6. Taste and adjust seasoning with more salt and pepper, if needed. Remove thyme sprigs before serving, if desired.
  7. Serve warm as a side dish or topping and enjoy.

Tips for Perfect Sautéed Mushrooms

  • Use a hot pan: High heat encourages browning, which creates the rich, savory flavor mushrooms are known for.
  • Don’t overcrowd the skillet: If the pan is too crowded the mushrooms will steam instead of caramelize. Cook in batches if necessary.
  • Dry mushrooms before slicing: Excess moisture prevents browning. Wipe them clean with a paper towel rather than rinsing under water.
  • Slice uniformly: Even slices cook at the same rate and produce a consistent texture.
  • Finish with acid: A splash of balsamic vinegar brightens the dish and balances the richness from ghee or butter.
  • Season at the right time: A little salt while cooking and a final adjustment at the end ensures the best flavor without drawing out too much moisture early on.

Variations and Serving Ideas

Customize this recipe to suit your meal and dietary preferences. Add shallots or a pinch of smoked paprika for extra depth. Stir in fresh parsley or chives at the end for a fresh finish. For a creamier finish, finish with a spoonful of crème fraîche or a splash of cream if not following Whole30. Serve these mushrooms over grilled steak, roasted chicken, scrambled eggs, grain bowls, or as a savory topping for cauliflower rice or roasted vegetables.

Storage

Store leftover mushrooms in an airtight container in the refrigerator for up to 3–4 days. Reheat gently in a skillet over medium heat to restore some of the original texture—avoid microwaving for extended periods as it can make them watery.
