Dark Chocolate Protein Cashew Butter Cups

These Dark Chocolate Protein Cashew Butter Cups are a simple, paleo-friendly dessert that delivers rich chocolate flavor with a protein-packed twist. They’re easy to make, taste indulgent, and are a great option when you want a better-for-you snack without guilt.
I recently discovered Rootz Nutrition and immediately liked their protein powder. I’ve never been a big fan of most protein powders because many contain poor ingredients and artificial flavors, but Rootz stands out for clean, natural ingredients and a pleasing taste. Their Paleo Protein Superfood blends egg white protein, hemp protein, and sacha inchi protein with a mix of whole-food superfoods to support muscle recovery and overall nutrition. I usually blend a scoop into a smoothie or use it as a low-calorie meal replacement, and it also works wonderfully in desserts like these cashew butter cups.


My favorite quick shake is a scoop of this protein powder blended with frozen banana and almond milk—it tastes like dessert. But I wanted to experiment by incorporating the powder into a chocolate-cashew cup. Instead of peanut butter, I used creamy cashew butter and mixed it with the protein powder. The result is a smooth, slightly nutty filling inside dark chocolate—a satisfying combo that really delivers.

Ingredients
- 1/4 cup Crazy Richard’s creamy cashew butter (or any smooth cashew butter)
- 3 tablespoons Rootz Chocolate-Banana-Nut Paleo Protein Superfood powder (or another chocolate-flavored paleo protein)
- 1 cup dark chocolate chips (60% cocoa or higher recommended)
- 1 tablespoon coconut oil
- Coconut oil spray (for lining the pan)
- Mini muffin pan and mini baking liners
Instructions
- Prepare a mini muffin tin by placing 12 liners and lightly spraying them with coconut oil spray. Set the tin aside.
- Bring about 2 inches of water to a simmer in a small pot. Place a heat-safe bowl over the pot (double boiler method) and melt the dark chocolate chips together with the coconut oil, stirring frequently until smooth and glossy.
- Drop roughly one teaspoon of melted chocolate into the bottom of each muffin liner, spreading slightly to coat the base. Transfer the tray to the freezer for 10–15 minutes, or until the chocolate sets.
- While the chocolate sets, combine the cashew butter and protein powder in a medium bowl, mixing until smooth. Chill this mixture in the refrigerator for about 5 minutes so it firms slightly and is easier to shape.
- With slightly damp hands, divide the cashew-protein mixture into 12 small marble-sized balls (about 1 teaspoon each). Gently reshape if needed so they hold together.
- Place one cashew-protein ball on top of each hardened chocolate base. Use your finger to gently press and flatten each ball into a smooth, even layer that reaches close to the liner edges.
- Pour about two more teaspoons of the melted chocolate over the flattened filling in each cup, covering it completely and smoothing the tops.
- Return the muffin tin to the freezer for another 10–15 minutes, or until the chocolate is fully hardened.
- Enjoy immediately or store the cups in an airtight container in the refrigerator or freezer. They keep well frozen for longer-term storage and are ready to eat straight from the fridge if you prefer a softer texture.
