Instant Pot Whole30 Barbacoa

Ingredients
- 4 lb boneless beef chuck roast
- Kosher salt, to taste
- 2 tbsp olive oil or avocado oil
- 1 white or yellow onion, thinly sliced
- 1½ cups beef broth
- 2 tbsp tomato paste
- 3 tbsp apple cider vinegar
- 1 tbsp chipotle chili powder
- 1 tsp ground cumin
- 4 cloves garlic, minced (or 1 tsp garlic powder)
- 1 tsp dried oregano
- 2 bay leaves
Instructions
- Cut the roast into 5–6 large chunks and season generously with kosher salt.
- Select the Sauté function on the Instant Pot and heat 1 tbsp oil. Sear the meat in batches until browned on all sides, about 3 minutes per side. Transfer browned pieces to a plate.
- Add the remaining oil if needed and sauté the sliced onion in the pot for about 4 minutes, until softened.
