Slow Cooker Thai-Style Beef Bowls Recipe

Prepare dinner ahead of time with these Slow Cooker Thai-Inspired Beef Bowls. This version of shredded beef is one of my favorites. The meat slowly simmers in a sauce built from coconut aminos, fish sauce, coconut sugar, and creamy peanut butter—ingredients that layer savory, salty, and slightly sweet flavors. Fresh ginger, lime zest and juice, and Thai chiles add brightness and heat, and the resulting shredded beef is deeply flavorful and fall-apart tender.

You can serve the shredded beef however you like: over steamed rice, in lettuce cups, or alongside a crunchy, quick-pickled veggie salad. Finish each bowl with plenty of fresh herbs and a lime wedge for a bright, zesty touch.

Ingredients

For the Steak

  • 2 tablespoons avocado oil
  • 4 garlic cloves, minced
  • 1/4 cup coconut sugar (or substitute brown sugar)
  • 1/3 cup coconut aminos (or use reduced soy sauce/tamari; adjust salt)
  • 1 tablespoon fish sauce
  • 2 tablespoons creamy peanut butter
  • Zest of 1/2 lime
  • 2 tablespoons lime juice
  • 1-inch knob fresh ginger, peeled and finely grated
  • 2–3 Thai chili peppers, minced (substitute 1/2 serrano if needed)
  • 2 pounds flap or flank steak, cut into 4 pieces
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

For the Veggie Salad

  • 6 mini bell peppers, thinly sliced
  • 1/4 cup thinly sliced red onion
  • 1 cup julienned carrots
  • 1 Thai chili pepper, minced (optional)
  • 1 garlic clove, minced
  • 1 tablespoon rice vinegar
  • 2 teaspoons fish sauce
  • 1/4 teaspoon kosher salt

For Assembly

  • 2 cups prepared white rice
  • Fresh cilantro leaves, for garnish
  • Fresh Thai basil leaves, for garnish
  • 1 lime, cut into wedges

Step-by-step – Slow Cooker Method

Step One: Make the Sauce

In the base of the slow cooker, whisk together the avocado oil, minced garlic, coconut sugar, coconut aminos, fish sauce, creamy peanut butter, lime zest, lime juice, grated ginger, and minced Thai chiles until the mixture is smooth and well combined.

Step Two: Season and Cook the Beef

Season both sides of each steak piece with kosher salt and black pepper. Nestle the steaks into the sauce in the slow cooker so they are mostly submerged. Cook on high for 4 to 6 hours or on low for 8 to 10 hours, until the meat is very tender and easily shreds with forks.

Step Three: Shred the Beef

When the beef is fully cooked, remove the pieces and use two forks to shred the meat. Return shredded beef to the sauce to keep warm while you prepare the salad.

Step Four: Make the Pickled Veggie Salad

In a large bowl, toss together the sliced mini bell peppers, red onion, julienned carrots, minced chili (if using), minced garlic, rice vinegar, fish sauce, and kosher salt. Let the mixture sit for at least 10 minutes to lightly pickle and soften the vegetables.

Step Five: Divide and Serve

Divide the cooked rice among bowls. Pile on the shredded beef and spoon some of the pickled veggie salad over the top. Garnish generously with cilantro and Thai basil leaves, and serve each bowl with a lime wedge for squeezing.

Recipe FAQs

What is flap steak?

Flap steak (also called bavette in some places) is a flavorful, thin cut that works wonderfully for shredding. If you can’t find flap, flank steak is a good substitute.

I can’t find Thai chili peppers—what can I use?

If Thai chiles aren’t available, use a small serrano pepper and start with about half; adjust to your heat preference.

Substitute for coconut sugar?

Brown sugar can replace coconut sugar. You can omit the sugar entirely for a Whole30-style approach, though the sugar helps with caramelization and balances savory flavors.

No coconut aminos—what else works?

Soy sauce or tamari can be used instead, but they are saltier. If using soy sauce, reduce added salt and consider omitting or reducing the fish sauce.

What fish sauce do you recommend?

Choose a high-quality fish sauce you enjoy; a rich, clean-tasting brand will enhance the dish.

Notes

Instant Pot Method

  1. Combine all sauce ingredients in the bottom of the Instant Pot and whisk together. Add 1/4 cup low-sodium beef or chicken broth—pressure cookers require extra liquid to build pressure.
  2. Season the beef with salt and pepper and nestle it into the sauce.
  3. Close the lid, seal the valve, and set to Manual/High for 45 minutes.
  4. When cooking is finished, carefully perform a manual release of the pressure. Once safe to open, shred the beef with two forks.
  5. Finish the recipe as written: prepare the salad and assemble bowls.

Freezer Tips

  • Let the shredded beef cool completely before transferring to airtight containers or freezer bags. Leave a little headspace for expansion, label, and date.
  • Thaw overnight in the refrigerator before reheating.
  • Reheat gently in a skillet over medium heat with a splash of water or broth to keep the meat moist, or reheat in short intervals in the microwave, stirring between intervals for even heating.
