I love minestrone—it’s a comforting, vegetable-forward soup that fills you up without feeling heavy. This Whole30-friendly version keeps the spirit of classic Italian vegetable soup while using compliant ingredients and bold flavor. Hearty vegetables, savory pancetta, tomato, and fragrant herbs come together in a broth that tastes like it simmered all day, even though it comes together relatively quickly.
This recipe can easily be adapted if you’re not following Whole30. In a non-Whole30 version you might stir in pasta or a parmesan rind as it simmers to add richness and body. For the Whole30 approach below, the focus is on robust vegetable flavor, quality chicken broth, and simple seasonings that let the ingredients shine.
Keep this recipe in your weeknight rotation: it reheats very well, freezes cleanly, and makes a great meal prep option. Serve it with a crisp green salad or roasted vegetables for a complete Italian-inspired dinner that’s both satisfying and nutritious.

- 4 oz. diced pancetta
- 2 tbsp. olive oil
- 1 yellow onion, finely diced
- 2 cloves garlic, minced
- 1 large carrot, diced small
- 2 stalks celery, diced small
- 1 medium zucchini, diced large
- 1 medium squash, diced large
- 2 tbsp. tomato paste
- 1/4 tsp. crushed red pepper (optional)
- 2 cups fresh green beans, cut into 2-inch pieces
- 1 cup sliced mushrooms
- 2 cups baby spinach
- 32 oz. chicken broth (use compliant broth for Whole30)
- 1 can diced tomatoes
- Salt and pepper, to taste
- 1 tsp. dried oregano
- 2 tbsp. fresh basil, julienned
- Heat a large Dutch oven or heavy pot over medium-high. Add the diced pancetta and cook until browned and crisp. Remove the pancetta with a slotted spoon and set aside, leaving the rendered fat in the pot.
- Reduce heat to medium and stir in the olive oil if needed. Add the onion, carrot, and celery, seasoning lightly with salt and pepper. Sauté until the vegetables soften, about 5 minutes. Add the garlic, zucchini, and squash; continue to cook for another 2–3 minutes. Stir in crushed red pepper if using.
- Mix in the tomato paste, coating the vegetables and allowing it to cook for a minute to deepen the flavor.
- Slowly pour in the chicken broth while stirring to incorporate the tomato paste evenly. Add the diced tomatoes, oregano, and the bulk of the fresh basil. Taste and adjust salt and pepper.
- Bring the soup to a gentle boil, then lower the heat to maintain a light simmer. Add the green beans and mushrooms and simmer for about 12–15 minutes, until the beans are tender and the flavors meld.
- Return the cooked pancetta to the pot, then stir in the baby spinach. Cook just until the spinach wilts, about 1–2 minutes.
- Taste and adjust seasoning with additional salt and pepper as needed. Finish with the remaining fresh basil for brightness.
- Ladle into bowls, garnish with chopped parsley if desired, and serve hot.
Notes and Tips
Variations: For a vegetarian version, omit the pancetta and use vegetable broth. If you are not following Whole30, add a tablespoon or two of grated parmesan or a parmesan rind while simmering for extra depth, and stir in cooked small pasta shapes before serving.
Make-ahead and storage: This soup keeps well in the refrigerator for 3–4 days. Reheat gently on the stove. It also freezes well—cool completely, portion into airtight containers, and freeze up to 3 months. Thaw overnight in the fridge before reheating.
Serving ideas: Serve with a crisp green salad, roasted vegetables, or crusty bread if not following Whole30. Add a squeeze of lemon or a drizzle of high-quality olive oil to brighten the bowl just before serving.
Ingredient swaps: Use kale or Swiss chard in place of spinach, or swap in other seasonal vegetables you have on hand. If you prefer a richer texture, blend a cup of the soup briefly and return it to the pot to thicken the broth naturally.
