Ingredients
  1. 1/2 cup raw almonds
  2. 3 pitted Medjool dates
  3. 2 scoops Rootz Paleo Protein Superfood
  4. 1/4 cup whole raw sunflower seeds
  5. 1/4 cup raw cashews
  6. 1/2 tsp cacao powder
  7. 2 tbsp coconut butter
  8. 1/4 cup coconut oil, melted
Instructions
  1. Place almonds, dates, protein powder, sunflower seeds, cashews, and cacao powder in a food processor. Pulse on high until the mixture breaks down into a coarse, crumbly flour.
  2. Add the coconut butter and melted coconut oil. Blend until the mixture comes together into a moist dough that holds when pressed.
  3. Use a tablespoon or small scoop to portion the dough and roll into balls. Arrange the balls on a baking sheet or plate lined with parchment paper.
  4. Chill the balls in the refrigerator for at least 30 minutes to firm up. Store in an airtight container in the fridge for up to two weeks, or freeze for up to three months.
