Cheesy Chicken Stuffed Bacon Wrapped Jalapeños

Ingredients
- 5 fresh, medium-sized jalapeños
- 1/2 cup finely shredded chicken (rotisserie chicken works great)
- 1/3 cup cashew queso (or use your preferred queso or cream cheese)
- 5 strips bacon, cut in half lengthwise
- 10 toothpicks
- 1/2 tsp smoked paprika, for sprinkling
Instructions
Prepare the Jalapeño Poppers:
- Slice each jalapeño in half lengthwise and, using a small spoon, carefully scoop out the seeds and membranes to reduce heat and make room for the filling.
- In a small bowl, combine the shredded chicken with the cashew queso (or your chosen cheese). Stir until the mixture is evenly combined and spreadable.
- Fill each jalapeño half with the chicken and queso mixture. Wrap each stuffed jalapeño with a half strip of bacon and secure it with a toothpick. Arrange the poppers on a plate and sprinkle them lightly with smoked paprika.
Cook the Jalapeños:
- Air Fryer Method: Preheat the air fryer to 375°F (190°C) for about 5 minutes. Place the jalapeños in a single layer — you may need two batches depending on the size of your air fryer. Cook for 5–6 minutes, or until the bacon is cooked through and slightly crisp.
- Oven Method: Preheat the oven to 400°F (205°C). Line a baking sheet with parchment paper and arrange the prepared jalapeños on it. Bake for 20–25 minutes, or until the bacon is browned and crisp. Serve immediately while hot.
