Everything Bagel Chicken Salad

Ingredients
Everything Bagel Chicken Salad
- 4 cups cooked chicken, chopped (rotisserie chicken works well)
- 1/2 cup dried unsweetened cherries, loosely chopped
- 1/2 cup walnuts, loosely chopped
- 1/2 cup Everything Bagel Ranch dressing (such as Tessemae’s)
- 2 tbsp fresh parsley, loosely chopped
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Sweet Potato Toast
- 1 large sweet potato, sliced lengthwise into 1/4-inch slices
Instructions
For the Sweet Potato Toast
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Arrange the sweet potato slices on the prepared sheet in a single layer. Bake for 18–20 minutes, or until fork-tender and lightly browned at the edges. Time will vary slightly with slice thickness.
For the Chicken Salad
- In a large bowl, combine the chopped chicken, dried cherries and chopped walnuts.
- Add the Everything Bagel Ranch dressing and gently toss until everything is evenly coated.
- Stir in the chopped parsley and season with kosher salt and freshly ground black pepper to taste.
- Serve the chicken salad warm or chilled on sweet potato toast, over greens, or in a sandwich or wrap.
